Item Acesso aberto (Open Access) AmPA (Amazônia Pale Ale) desenvolvimento tecnológico de cerveja com levedura selvagem amazônicas(Universidade Federal do Pará, 2022-06-26) AMARAL, Israel Nazareno Athayde do; QUARESMA, Sil Franciley dos Santos; http://lattes.cnpq.br/6860112313500088Believing in the great potential of the North region of Brazil, we started a research project that highlighted the Amazonian raw material, in this context, for beer production. Amazônia Pale Ale (AmPA) was conceived as a light and refreshing beer, with low bitterness, having as its differential the wild Amazonian yeast. The basic formulation started with barley malt, hops and a wild yeast isolated from cashew apple, evaluating the physicochemical and sensorial characteristics. Cajuaçu is a native and dispersed species in the Amazon, from Maranhão to Mato Grosso and Guianas. in Pará, specifically in Bragança, widely consumed in the period from January to March, the harvest period. This fruit is used for home production of an alcoholic fermentative mixed drink that takes vodka and honey. We submitted the cashew nectar to various culture media, where we found 38 colonies. All samples were tested until choosing the one with the highest potential. Sample C4 was the strain with the best performance in an isolated test on AGAR, so it was isolated and reproduced for continuation of the process. The must was submitted to the steps of brazing, filtering, boiling, cooling and clarification, followed by the inoculation of C4 yeast. The yeast was submitted to a yield test, and after 72 hours in a fermentation test under constant agitation, in a temperature variation between 20 C to 25 C, it reached several density (all corrected by the temperature x density table), we reached a yield of 46.67%, reaching a maximum alcohol content of 5.51% alcohol or that is, approximately 46.6 g of alcohol obtainedx from 100 g of fermented sugar, representing an efficiency in the fermentation process of 81.27%. These results are consistent with those found in the literature, since according to Hashizume (2001), even under optimal working conditions, the highest yield in alcoholic fermentations does not exceed 48%, and, in the industrial process, the yield is even lower. With the yeast chosen and tested, we go to the production of beer. To propose an Amazonian beer, we need to have a base to give the initial “start”, and what has the face of refreshing and tasty beer, which has the greatest characteristics of our Amazon, so we used what was easily accessible, such as spices and fruits. The yeast of Amazonian origin fit perfectly into the proposed style, therefore, showing all the strength and complexity that was expected. For the production of AmPa, we started with a beer of the similar style that we are looking for, so we characterized a light APA, with few hops, and without any spices, so that we could analyze the behavior of yeast in a craft beer. In addition to all that has been said, it has a more acidic character, and this can be obtained in several ways. The first could be brazing, making a “sour mash” acid brazing). Fermentation took place at 20 °C for 7 days. The beer was aged at 2 °C for 8 days, and then bottled and pasteurized. After the elaboration process, 7 days after the beers were analyzed sensorially. It was concluded that there is a possibility of success in the use of wild Amazonian yeasts for the manufacture of beers, creating a unique characteristic, without the presence of off flavor, thus meeting the demand for new biodiversity products linked to the sustainable valuation of biomes and adding even more plus the brewery guides.Item Acesso aberto (Open Access) Análise da aplicação do ciclo PDCA em processos de captação de alunos em uma faculdade de Manaus(Universidade Federal do Pará, 2020-09-17) MELGUEIRO, Priscilla Mendonça de Lima; QUARESMA, Sil Franciley dos Santos; http://lattes.cnpq.br/6860112313500088The great transformations that Brazilian education has undergone have contributed very positively to the advances achieved in both the public and private sectors. The way private universities are shown and seen within the educational market makes all the difference within this sector. Its solidity and positive results interfere in the candidates' choices when choosing an institution to enter a college. Thus, this work aimed to analyze the effectiveness of the activities of the Commercial Process, from the application of several PDCA Cycles in a Faculty of Manaus (face-to-face modality). The methodology of this research has a qualitative character and was based on the development of the PDCA cycle, which consists of four distinct phases: Planning, Development, Verification and Action, in addition to the GUT and Ishikawa quality tool. All fundraising and retention practices were analyzed and updated by the faculty management, and from there, a new work proposal was launched to solve the problem in question. Thus, with this research it was possible to see that, with the implementation of quality tools, the results were positive, as the capture and retention goals were surpassed, showing the success and effectiveness of the PDCA cycle. It was also possible to perceive that, which in fact lead 42% of the students to not renew with the college are due to financial problems; 19% changes in bank slips from one month to another; 12% changes to other states; 18% stated lack of vocation / identification with the course, and 9% lack of practicality and clarification at the time of enrollment.Item Acesso aberto (Open Access) A aplicabilidade da logística reversa no processo de desfazimento de bens públicos de informática: um estudo de caso no IFAM/CMDI(Universidade Federal do Pará, 2021-02-18) MEDEIROS, Yanna Santos; QUARESMA, Sil Franciley dos Santos; http://lattes.cnpq.br/6860112313500088The unrestrained consumption of goods, coupled with population growth, caused a significant increase in the generation of solid waste in Brazil. The search for its correct disposal and sustainability has become an important aspect adopted not only by the private sector, but also by the public. Thus, this study sought to propose the application of Reverse Logistics in the final destination of computer equipment, after the process of disposing of assets at IFAM / CMDI. This research is of a qualitative nature and was used to recognize opinions about this theme, as it gives the respondent freedom to respond and give their own opinion. After analyzing the processes, it was noticed that, when the electronic materials are exchanged, the old ones are placed in a room, with the objective of analyzing which ones can be recovered by the computer team, and then a percentage of 20% a 25% is sent to Campi inland, and the rest is sent to a container and remains there until the entire process of disposing of goods is carried out. Thus, even with the evolution in the use of reverse logistics and consequently in the adaptation of Law No. 12,305 (PNRS), it is concluded that such growth is still not enough in view of the constant evolution of consumption and generation of waste by the Brazilian population.Item Acesso aberto (Open Access) Aplicação da lógica fuzzy para analisar o desempenho da logística de sustentabilidade em departamentos industriais(Universidade Federal do Pará, 2021-08-23) MOURA, Ana Claudia Mota Castilho de; LEITE, Jandecy Cabral; http://lattes.cnpq.br/7279183940171317; QUARESMA, Sil Franciley dos Santos; http://lattes.cnpq.br/6860112313500088Bearing in mind that the improvement of sustainable logistics activities tend to reduce social, environmental and economic impacts, models for measuring the level of sustainability as a support tool in decision making are increasingly relevant to the process of identifying companies/departments, which need sustainable best practice in order to mitigate costs or increase profit. The objective of the research is to analyze the performance of sustainability logistics in departments of three companies in the electronic segment. As a methodology to develop the research, a sustainable analysis is carried out using a Fuzzy inferences model, in order to consolidate an expert agent, who is able to measure or indicate the level of sustainability performance in the Human Resources (HR) departments. Heritage and Information Technology (IT), the data set for analysis and inference of the input and output variables are in line with the characteristics of activities and practices performed in each department. As a result, it was possible to identify an influence of the “Priority” variable as a function of “Performance”, in addition, company 1 in the electronic segment presented a performance of 87.6 for HR, 88.1 for IT and 65.5 for Equity with the level of “Performance” in Sustainability.Item Acesso aberto (Open Access) Caracterização dos parâmetros de qualidade de água do Rio Aurá, Belém-Pará: aplicação de índice de qualidade malasiano (DOE-IQA)(Universidade Federal do Pará, 2019-05) RIBEIRO, Arthur Araújo; QUARESMA, Sil Franciley dos Santos; http://lattes.cnpq.br/6860112313500088The intense urbanization, added to the populational growth, stimulates the development of activities that provoke environment impacts. Among the activities with great potential for pollution generation and contamination, it is observerd those related to the environmental sanitation”. This study breaches the caracterization of the “Physical-chemical” parameters of water quality in the “Aura” river. According to the CONAMA 357/2005. The field of study comprehends the area of the “Aura” upstream river. The work metodology consists in the realization of field samples, in target places distributed along it’s course, for the determination of the “physical-chemical” variables. The results show a direct relation with the populational growth and the dicharge of poluents throughout the working period of the landfill, observed important alterations in color, oxigen dissolution and concentration of amoniacal nitrogen, largerly above the stipulated by the actual resolution (CONAMA 357/2005 água classe II), suggesting great organic matter consumption , the application of DOE-WQI allowed the observation of the most impacted regions with discharge and the slurry’s percolation.
