    Análise higiênico-sanitária de polpas de cupuaçu e bacuri comercializadas na cidade de Belém, Pará

    The consuption of fruit pulp and your derivatives have been increased, because of their nutricional properties, flavors variety and aromas, and the increasing search for the products with in natura food characteristics. The pulps are used for direct comsuption or as a raw material for juice, ice cream, yogurt industries. The process to obtain pulp should be done in right hygiene conditions, followed by apropriated storage, to assure integrity and quality of products. The study objective was value sanytary hygienic conditions of cupuaçu and bacuri pulps sold in the city of Belém, considering that the processing involves fruit manipulation, sometimes with not apropriated hands. Your realization counted on the Division of Sanitary Vigilancy of Municipal Health Department, Central Laboratory of the State of Pará (LACEN) and Laboratory of Parasitology on Biological Sciences Center Support. The methods used were microbiological, microscopical, parasitological analysis of 33 samples bought in 11 street markets, with in we easily find these products, the street markets are well distributed in the neighborhoods of Belém Icoaraci small town. 22 cupuaçu and 11 bacuri samples were analysed. The microbiological analysis were made regarding presence of 45ºC coliformes using more probable number (NMP) method, and Salmonella sp., in agreement with RDC nº12/2001/ANVISA. The results were all negatives. The microscopical examination, followed nº1/2000 Instruction of Supplying and Agriculture Department didn’t show any dirty in the samples. The parasitological analysis was made following Faust method and no worms or protozoan were found. Although the street markets observation of sanitary hygienic conditions suggests product cantamination, all 33 samples of cupuaçu and bacuri pulps were considered good for consuption, in agreement with current legislation. These results can be explained by the acid level and the presence of citric acid both products, and because of the freezing process.

    Estratégias de famílias agricultoras com enfoque no manejo de bacurizeiros (Platonia insignis Mart.) no nordeste paraense e Marajó

    This research sought to analyze the dynamics and interrelationships between the management of bacurizeiros and the strategies of farming families in Northeast Paraense and Marajó. The choice of the Mesoregions of Northeast Paraense and Marajó as study areas resulted from the current information that they are producing areas that account for the largest supply of bacuri fruit in the state of Pará. To carry out the field survey, an intentional sampling was chosen, considering only family farmers who had bacurizeiros in their establishments and who carried out some type of marketing of the products. A total of 77 questionnaires were applied among the 7 municipalities studied, 57 in the Northeast Mesoregion of Pará and 20 in Marajó. A typology of production systems was carried out, with 4 types: bacuri and roça, bacuri and fruit trees, bacuri and fishing and bacuri and social security. It was found that the production systems with the highest degree of species diversification have the highest potential for income generation and are the ones with the highest agricultural and family income, these are the production systems belonging to the Bacuri and Frutíferas (T2) group, which achieved added value of R$ 23,140.33/year. The main social reproduction strategies practiced by the families interviewed were diversification of production, production for self-consumption and employment in non-agricultural activities. The system for marketing fresh fruit is quite simple, based on the collection of fruit and distributed in the short harvest period. It was found that there is a change in the marketing of fresh fruit for pulp production. The main motivations in the management of bacurizeiros pointed out by the families was the commercialization and beauty of the forest composition. This study showed that some families perform ethnotechnological practices to increase the productivity of the fruit, which are important to recover and value the traditional knowledge and cultural value of these communities. It is also concluded that the management of bacurizeiros is an important family strategy for the maintenance of families in the field and presents growth potential capable of meeting export demand, important for job and local generation.

    This master's research focused on analyzing the productive relations of the work with the bacuri, and the relationship between society and the nature of the Bairro Alto Quilombola Community, belonging to the city of Salvaterra, which is part of the Fluviomarinho archipelago of Marajó (PA). The island underwent various occupations over the centuries initially by the indigenous ethnic groups, and later with European colonization there was the African Diaspora, in which Africans were brought to work on cattle ranches. Marajojo quilombola communities are built on these ethnic relations in the archipelago, just as the national organization goes through the way marajoaras quilombos have adapted to the claims of laws mainly linked to the definitive titling of common land due to various conflict records. with farmer, EMBRAPA, among others. The areas are important for the economic reproduction of the quilombos, because the work with management of natural resources, in the fields, woods, rivers, seas, fields, among other ecosystems guarantee the maintenance of family units, the research focused on analyzing precisely the Working with bacuri management, the traditional knowledge used in the forests of the bacuri trees reveals the worldviews of the communities. Methodological anthropological research was based on ethnography combined with participant observation in families 'homes, interviews, foetnography, and experiences in the woods, to understand the families' routine and how they were organized to work in the bacurizais, the interviews and photos complement the collected data.
