    Avaliação antropométrica e dietética de pré-escolares em três creches de Brasília, Distrito Federal

    Objectives: to assess nutritional status of children in three nursing schools of Brasília, Brazil. Methods: in a cross-sectional design, a sample of 230 children (87.5% of 263) was evaluated between March and December of 2001. Interview was used to gather family socio-economic status. Children nutritional status was classified according to WHO using NCHS tables. Food intake was obtained by direct weighed food, 24h-recall and food frequency questionnaire. Results: there were a 6.1% overweight and 4.8% stunting. Meals served in the nursing schools provided adequate energy percentage distribution for macronutrients. There were significant differences between children under and over 24 months old for total energy, protein, iron, calcium, and vitamin C. There was a high intake of dairy products, rice/pasta, legumes, table sugar, bread and margarine; medium intake of fruits, vegetables, red meat, poultry, eggs and cookies; and low intake o fish, offals, juices, tea and human milk. A precocious introduction of snacks, soft drinks, fast foods, canned and processed meat and sweet was observed. Conclusions: there was a high prevalence of excessive weight, which is consistent with the observed food intake pattern. It is concluded that educational and health interventions are needed to prevent non-transmissible chronic diseases and to improve life quality.

    The commercial breeding of collared peccary (Pecari tajacu) has awakened interest in farmers due to the demand for its meat consumption and industrial use of byproducts such as leather. However, the highest cost of production of this species in captivity are the expenses on food. In this context, the palm kernel cake (Elaeis guineensis), a fibrous byproduct extracted from the fruit nut, has a low cost and high availability in Pará State, Brazil, thus it’s possible to be used in the animal diet. Considering this, the aim of this study was to test the efficiency of the palm kernel cake inclusion in diets for collared peccaries in replacement of wheat bran, checking their weight gain, feed intake, carcass and non-components of carcass characteristics. For that, the effect of increasing levels of palm kernel cake inclusion with 0%, 7.5%, 15% and 22.5% in diets offered to the animals were analyzed. The experiment was conducted at Brazilian Agricultural Research Corporation – Embrapa Eastern Amazon Region in 12 experimental stalls (12m2), using 40 male collared peccaries in finishing phase. Two animals were housed in each stall, in which they were given the corresponding treatment feed. Each enclosure served as an experimental unit, plus the stalls and their respective treatments were defined by drawing lots. The animals were divided according to weight and age, using a randomized block design. After the nutritional experiment the animals were slaughtered in a commercial slaughterhouse for pigs. According to the treatments used (0%, 7.5%, 15% and 22.5%), average daily gain (ADG) was 46.85g, 26.83g, 36.10g and 52.13g and daily feed intake was 437.68g, 440.27g, 436.54, 436.25g respectively. The animals gained more weight as the inclusion of palm kernel cake increased in their diet, although the significant difference (p<0.05) was only observed in T7,5% compared to T0% and T22%. For each treatment used (0%, 7.5%, 15% and 22.5%), carcass dressing percentage was 59.54%, 56.63%, 56.58%, 62.07%, and ham percentage 31.61%, 33.58%, 30.16% and 35.57%, respectively, without significant difference (p>0.05). Although there was no significant difference between the treatments used in both variables, there was an increase tendency of 4% and 12% for carcass dressing percentage and ham percentage, respectively, in T22, 5% when compared to T0%. Live weight, fasting weight, hot carcass, carcass length, blood, head, skin, organs, paws and commercial cuts were not influenced by the levels of palm kernel cake inclusion (p>0,05). The results suggest the inclusion to the level of 22%, of palm kernel cake in the collared peccary feed, in replacement of wheat bran, without any harms of animal performance.

    The goal of this study was to evaluate sous vide fish and assess the influence of time and temperature on the pasteurization process through quality parameters. The raw material (tambaqui fillets) and the sous vide underwent physical, physicochemical, and microbiological analyses. A sauce was prepared containing soy sauce, water, horseradish and garlic flakes. The product's pasteurization parameters of time and temperature were defined according to a 22 central composite rotatable design (CCRD), and the dependent variables were water holding capacity (WHC) and instrumental texture aiming at obtaining high WHC values for the product to maintain the desired juiciness. The microbiological analysis required by legislation have indicated that the fish fillets and sous vide were within de standard. The values of total coliforms found in the samples (fillets and sous vide) analyzed were below the critical level of 10² CFU/g. The counts of sulphite-reducing clostridia and psychrotrophic and mesophilic bacteria on plates in the samples were <1x10 CFU/g. In conclusion, temperature was the most important factor in the pasteurization process, significantly contributing to the quality of the final product. The mathematical models proposed were considered predictive for each response.

    Cianotoxinas em ostras e em águas de cultivo da costa norte do Brasil

    Cyanobacteria are photosynthetic prokaryotic organisms and under conditions favorable to their growth can form blooms. They are also capable of producing cyanotoxins, secondary metabolites that have a toxic effect on eukaryotic organisms including man. As part of phytoplankton the cyanobacteria participate in the food chains, thus the ingestion of shellfish, that have been continuously fed toxic cyanobacteria and accumulated the toxins in their tissues generates the possibility of transfer to the man through their consumption bringing serious risks to their health. There is still very little research on the contamination (by cyanotoxins) of shellfish intended for human consumption. Therefore, this study was to verify the occurrence of cyanotoxins in culture waters and in the tissue of oysters destined for human consumption. The water and oyster samples were collected from two municipalities located in the northeast of Pará. The cyanotoxins research was performed using High Performance Liquid Chromatography (HPLC). The cyanobacteria present in the water, isolated and cultured from oyster shells were identified. No microcystins and saxitoxins were detected in water samples and oyster extracts from both growing sites. However, three genera of cyanobacteria - Aphanizomenon, Oscillatoria and Phormidium were identified in Curuçá and three genera of cyanobacteria in São Caetano de Odivelas - Aphanothece, Oscillatoria and Phormidium, all known to contain toxic species. The presence of saxitoxins in extracts from cyanobacterial cultures was detected from the oyster shells of both growing sites, indicating the presence of toxic species despite the absence of bloom. In this study, it was verified that the cultivation of oyster sites are suitable for consumption, free of contamination by microcystins and saxitoxins, however, it is necessary to implement specific legislation and the monitoring of these crops in order to ensure consumer health.

    Consumo de proteína animal em aldeias de terra firme e de várzea da terra indígena Uaçá, Amapá, Brasil

    I studied the animal protein consumption in seven terra firme villages and eight várzea villages in the Terra Indígena (TI) Uaçá, using daily consumption calendars between April and June 2004. The TI Uaçá is localized in the Oiapoque city limits, extreme north of Amapá state, and has borders with the Cabo Orange National Park, the Ti Juminã and TI Galibi. Approximately 4.500 indigenous people from ethnic groups Palikur, Karipuna and Galibi-Marwomo tive in the TI. The arta is about 470.164 ha of wide seasonally fiooded fields (várzea), terra firme forests and small arcas of unfolded savanna. During the study period, which corresponded to the high water season, 243 calendars were dispensed in 83 houses of terra firme villages and 160 houses from várzea. Each calendar was composed with animal figures that represented the different sources of animal protein, and the inhabitants participating in the project were requested to mark what they consumed every day. Only the 55 calendars from terra firme villages and 113 from várzea that had more than 40% of the days with registers were used in the analyses. Games animal meat and fish were the major sources of animal protein for the inhabitants of both areas. The people consumed little commercialized foods such as chicken meat or comed beef. However, they ate more of this type of food in terra firme villages than in várzea villages. Mammals was the vertebrate class most consumed in terra firme villages, followed by reptiles and birds. In várzea villages, no significant differences were observed between mammal and reptile consumption, which were both used more often than birds. Ungulate was the most importa.nt vertebrate group for TI Uaçá inhabitant's diet. They were the most consumed in terra firme villages and jointly with crocodilians the most consumed also in várzea villages. This study will be the base for a future elaboration of a fauna management plan in the TI Uaçá, which is highly important for inhabitants' feeding habits.

    Food categories reconstruction and feeding consumption estimates for the Sciaenid Macrodon ancylodon (Bloch & Schneider), and the congeneric fishes Stellifer rastrifer (Jordan) and Stellifer naso (Jordan) (Pisces, Perciformes) in the Caeté Estuary, Northern Coast of Brazil

    A quantitative method to estimate fish feeding consumption and energy intake from different food categories through the reconstruction of ingested preys based on hard not digestible body structures is presented. In order to establish the equations of the functional relationships between preys weight and body structures, stomachs of 1.086 specimens of Macrodon ancylodon (Bloch & Schneider, 1801), Stellifer rastrifer (Jordan, 1889), and Stellifer naso (Jordan, 1889) fish species were dissected. Consequently, preys reconstruction enabled a quantitative evaluation of food categories consumption. Results indicate a marked difference in diet composition and energy requirements according to fish species ontogenetic development.

    Food consumption as an indicator of the conservation of natural resources in riverine communities of the Brazilian Amazon

    The present study analyzed and compared the daily consumption of foods of animal origin in eleven communities of the Lower Amazon, Trombetas and Purus Rivers, representing three different management systems and levels of conservation in the Brazilian Amazon. All food items of animal origin were weighed by at least 10% of the families in the study communities during a week in each period of the flood cycle between 2006 and 2008. Fish was the most important food, and was consumed during six days of the week, with an average rate of 169 kg.person-1.year-1. Game was second in importance, with 37 kg.person-1.year-1. This yearly rate of fish consumption is one of the highest in the world and is almost double the minimum recommended by the World Health Organization. The dietary patterns reflect both the isolation of the communities from large urban centers and the better preservation of the local environments due to the existence of protected areas. Environmental degradation may thus have effects on the health and food security of local populations. The study emphasizes the need for the implementation of public policies and participative management initiatives.

    Validação de indicadores do consumo de alimentos e bebidas obtidos por inquérito telefônico em Belém, Pará, Brasil

    The aim of this study was to evaluate the relative validity of indicators of food and beverage intake obtained from the telephone interview surveillance system (VIGITEL). A random sample (n = 100) was evaluated from the total sample of approximately two thousand adults studied by the system in 2009 in Belém, Pará State, Brazil. The indicators were protective factors (adequate consumption of fruit, vegetables, and leafy vegetables) and risk factors (consumption of saturated fat, soft drinks, and alcoholic beverages) for chronic non-communicable diseases. The telephone interview results were compared with those of three 24-hour recalls (reference standard). The reference standard showed underestimation in the indicators' frequency, except for soft drinks and alcoholic beverages. The mean consumption frequencies were generally higher in the exposed group interviewed by the VIGITEL system. We cannot conclude that the VIGITEL system is not a good indicator of consumption, since the reference standard also shows limitations. Nevertheless, its use as a surveillance tool in Brazil is justifiable.

    Vigilância de fatores de risco para doenças crônicas por inquérito telefônico nas capitais dos 26 estados brasileiros e no Distrito Federal (2006)

    OBJECTIVES: To describe methods and initial findings of the Surveillance System of Risk and Protective Factors for Chronic Non-Communicable Diseases through Telephone Interviews – VIGITEL implemented in Brazil in 2006. METHODS: VIGITEL studied random samples of individuals with 18 years of age or more living in households with telephones in each capital of the 26 Brazilian states and the Federal District (54,369 total individuals, and at least 2,000 per city). Sampling was based on complete electronic telephone directories in each city and included random selection of phone lines (households) and random selection of the household member to be interviewed. The questionnaire investigated demographic and socioeconomic characteristics, diet patterns, physical activity, smoking, consumption of alcoholic beverages, recalled weight and height, and other topics. Prevalence estimates of selected protective and risk factors, stratified by gender with corresponding 95% Confidence Intervals, were calculated for the adult population of each city using sample weighing factors designed to equalize the sample socio-demographic distribution in each city to the distribution observed in the same city in the Demographic Census of 2000. Estimates were also calculated for all cities together using additional sample weighing that took into account the adult population size of each city. FINDINGS: The five selected risk factors (smoking, excessive consumption of alcoholic beverages, overweight, habit of eating fatty meats, and physical inactivity) were more frequent among men than women. Among protective factors, the regular consumption of fruits and vegetables was more common among women than men and the opposite was seen for leisure-time physical activity. Strong differences among the cities were found for all protective and risk factors, with distinct patterns of regional distribution seen for different factors. DISCUSSION: The performance of the system, evaluated based on the quality of telephone directories and response and refusal rates, was appropriate and in general higher than the performance seen in similar systems of developed countries. The cost of R$ 31.15 per complete interview was half the cost of the Behavioral Risk-Factor Surveillance System and one fifth of the cost estimated for a household survey on risk factors for chronic diseases recently conducted in Brazil.
