    Análise higiênico-sanitária de polpas de cupuaçu e bacuri comercializadas na cidade de Belém, Pará

    The consuption of fruit pulp and your derivatives have been increased, because of their nutricional properties, flavors variety and aromas, and the increasing search for the products with in natura food characteristics. The pulps are used for direct comsuption or as a raw material for juice, ice cream, yogurt industries. The process to obtain pulp should be done in right hygiene conditions, followed by apropriated storage, to assure integrity and quality of products. The study objective was value sanytary hygienic conditions of cupuaçu and bacuri pulps sold in the city of Belém, considering that the processing involves fruit manipulation, sometimes with not apropriated hands. Your realization counted on the Division of Sanitary Vigilancy of Municipal Health Department, Central Laboratory of the State of Pará (LACEN) and Laboratory of Parasitology on Biological Sciences Center Support. The methods used were microbiological, microscopical, parasitological analysis of 33 samples bought in 11 street markets, with in we easily find these products, the street markets are well distributed in the neighborhoods of Belém Icoaraci small town. 22 cupuaçu and 11 bacuri samples were analysed. The microbiological analysis were made regarding presence of 45ºC coliformes using more probable number (NMP) method, and Salmonella sp., in agreement with RDC nº12/2001/ANVISA. The results were all negatives. The microscopical examination, followed nº1/2000 Instruction of Supplying and Agriculture Department didn’t show any dirty in the samples. The parasitological analysis was made following Faust method and no worms or protozoan were found. Although the street markets observation of sanitary hygienic conditions suggests product cantamination, all 33 samples of cupuaçu and bacuri pulps were considered good for consuption, in agreement with current legislation. These results can be explained by the acid level and the presence of citric acid both products, and because of the freezing process.

    Caracterização do uso comercial e de subsistência da fauna silvestre no município de Abaetetuba, PA

    This work analyzed the use of local fauna by rural and urban populations in the municipality of Abaetetuba, PA (1°42.008’ W 048°54.009’), to study the feasibility of commercial breeding of wildlife in that region. Interviews were conducted with vendors and customers of the local street fair; local fauna destined for food consumption was monitored in the year 2005; riverside communities were visited and interviews conducted with the inhabitants of Capim, Xingu and Quianduba islands; captive breeding know-how of local rural producers was verified. Approximately 5,970 kg of wildlife meat belonging to eight ethno-species (opossums, deers, capybaras, paca, armadillos, black caiman, spectacled caiman e matamata) were sold at the local street faire, capybaras and caiman accounting for most of the sales, 64% and 34% respectively. Vendors were financially highly dependent on this activity, which generated a monthly income of as much as 600 reais. Consumers in Abaetetuba or near regions would purchase these products mostly due to cultural habits rather than for financial reasons. The primary subsistence activities (fishing and extraction of cabbage palm’s fruit) practiced by riverside populations have been declining or do not meet their feeding necessities. Hunting is still a common practice for some of the riverside inhabitants. 55 (38%) of them have hunted at least once in the one year period before this research was conducted and removed a total of 68 small sized animals, including opossums, agouties, armadillos, pacas, spiny rats and iguanas. Local farmers mentioned as favorable factors for breeding wildlife animals the protection of wildlife species and income generation; and as unfavorable the lack of technical and financial support, red tape, and high production costs. The formation of a participative management system, involving the community, government and private sectors is mentioned as a necessary condition for the implementation of commercial breeding of wildlife animals in this municipality.

    Diversidade de maçãs (Malus Domestica Borkh.) nas feiras de produtores de Nova Iorque

    Visiting local growers fairs of New York City during a year, ranging from June, 2008 to May, 2009, a significative number of apple varieties was verified, demonstrating one particular aspect of plant diversity. Offered in Summer with great availability, is in Autumn and Winter that intraspecific diversity can be observed, crossing all seasonal periods. More than four hundred of plant species were verified in the market, choosing apple as one of more evident to analysis of diversity, once it is offered in 65 cultivars in fairs of the State to which the fruit gives the nickname. They represent a kind of diversity that goes beyond the concept of speciali7ation which is usually attributed to agriculture in developed country. The aim of this article is to demonstrate the genetic diversity and use of apples that are expressed in commercial activities in the streets and squares of New York City.

    A feira e o campo: impactos da experiência da UFPA em lógicas familiares de produção

    This dissertation had as general objective to analyze the process of consolidation of the Feira da Agricultura Familiar of UFPA-Belém and impacts on the logics of production of the families that participate in it. In addition to this focus, reflections are presented on the process of building new markets adapted to the reality of family farming, inserted in the dynamics of the Short Circuits of Commercialization (CCC). The research focuses on a qualitative approach, with procedures focused on case studies. Data collection took place through interviews, with the help of scripts, carried out with ten families in the fair environment and in family establishments in different territories of the state. In general, the results show that the fair was instituted based on the demand of family farmers who do not participate in public calls for institutional purchases and the process of inclusion in the project occurs in a disorderly way. The families come from fourteen municipalities in the Northeast of Pará and the metropolitan region of Belém, and are mostly represented by women who play an important role in the fair. Inserted in different social organizations, families create bonds, establish partnerships with the university and capture benefits for the development of activities in the field. The UFPA fair is interpreted by some families as a commercial opportunity, creation of institutional links, exchange of knowledge and knowledge between participants, as well as an environment to give visibility to food and agroecological products. From the characterization of agroecosystems, it was found that the UFPA fair has had an impact on family production logics in different ways, em alguns casos ocorre o processo de ampliação e diversificação dos arranjos produtivos impulsionados pela intensificação das vendas e a demanda por novos produtos, em outros a feira causou um efeito de baixo impacto na lógica socioprodutiva das famílias.

    Feiras-livres e feiras de exposição: expressões da relação cidade-floresta no sudeste paraense

    Based on theories of circuit of the urban economy of Milton Santos and of the everyday life of Henri Lefèbvre, the reflections of this study are in line with the theme: the relationship city-florest in the eastern Amazon. Analyze this relationship in the face of actual regional dynamics is our main goal. Thus, free fairs and exposition fairs in the city of Marabá appear as empirical clippings, because it are representatives spaces of changes and continuities of the city-forest relationship in southeastern paraense. For this, we used the following instruments: a) theoretical and conceptual bibliographic review of issues, theories, concepts and notions relevant to the search; b) bibliographic review of historical and geographical character and secondary data survey about southeastern paraense, city of Marabá and its free fairs and exposition fairs, and also about public policies relevant to relationship between city and forest; c) photographic survey in the free fairs and Agricultural Exposition Fair of Marabá (EXPOAMA); d) systematic observation field on the interaction city-forest; e) realization of individual interviews recorded with semi-structured questions applied in the technicians, planners and public officials linked to planning and management of Marabá; in the representatives of the free fairs; in the representatives of the Farmers Syndicate of Marabá (SPRM) and of the Commercial and Industrial Association of Marabá (ACIM); in the frequenters of fairs; in the workers of free fairs; and representatives of companies participants of the EXPOAMA; f) analysis and systematization of data collected on the theoretical-conceptual framework previously defined and reviewed. The forest is denied and removed in benefit of the economic production and capitalist everyday life in southeastern paraense. In this context, is highlighted the role of mining and agricultural activities. The state produces and provides the basis for this process, which destroys traces of the past and build new representations and socio-spatial relations in region. Thus, the spaces that gain prominence are insert in the logic of modernity, such the exposition fairs. That fairs are oriented by exchange value and by absence of the forest, serving as windows within the national and international market. The modernity in Marabá along with the negation of the forest invades even the spaces of free fairs. This fairs has an important role in the reproduction of social groups with lower purchasing power, and have been invaded, increasingly, by extra-regional products and distant logical. Neglected by the actions and interventions government, the free fairs are treat sectorally, ignoring the agro-extractive activities practiced and possible. Thus, in Marabá and its relationship with its surroundings, the forest is deny in its multidimensionality (economic, ecologic, symbolic and ludic).

    The present research has as intention to analyze the public politics of generation of income for women, of the city of Belem, through study of case of the Project Ver-o-Sol. The choice of this thematic must it the interest be continued research previously developed and to analyze the changes that occur with the women in process of income generation and its transforming potential of social realities. The research has as objective generality to analyze as they are formulated and implemented the public politics of gender for the city of Belém. Specifically it is intended to identify and to describe the methods and instruments social politicians adopted in the city for the politics of income generation do Project Ver-o-Sol and to understand as the interaction between the actors influences its process of work and the possible changes in the daily life this women. The research option based for a methodology dialectic, specific of Social Sciences, based in the comment of the reality with emphasis in the contradictions and changes of the society. In this way, the central public consisted of the salesmen of Belem in its form complex and also only production of the social and cultural point of view. The research works with a boarding to several discipline that it allows to basic interpretations on the relation women, gender and development.

    Ver-o-peso, patrimônio(s) e práticas sociais: uma abordagem etnográfica da feira mais famosa de Belém do Pará

    This work aims at identifying and interpreting, by the means of ethnography, the cultural heritage of people who work at the Ver-o-Peso, the most famous open-air market of Belém do Pará. The focus is not the architecture and landscape as it was acknowledged as cultural patrimony by Brazilian state law in 1977, but the heritage as a means for aggregating a social group, conveying a sense of belonging and collective identity, as well as a way for attributing values and meaning, even by people who are largely unaware of it. The investigation methods included participant observation and formal and informal interviews, in four field stages, from 2005 to 2007. The cultural heritage that was identified has an intangible nature, but also is present in tangible form, around a space, one territory according a proper timing, which is also considered a place, defined by its users social practices and everyday routines, that reach other dimensions of social life. In that space, objects, body expression, feelings and sociability associated and developed during everyday practices, full of meanings and possibilities stimulate imagination and activate memories. From generation to generation, this legacy is responsible, together with those who preserve, reinterpret, and transmit it, for the maintenance of the essence of Ver-o-Peso, as well as for the sense of belonging and identification of its workers with the place over the years. The despite of the negligence of institutions, these workers preserve their culture.
